Bao Garlic Mayo

PREP TIME: 5 MINUTES

COOK TIME: 15 MINUTES

SERVES: 8-12

INGREDIENTS

6 egg yolks

4 cloves of garlic

500ml vegetable oil

1 tsp white vinegar

1 tsp lemon juice

½ tsp turmeric

1 tsp salt

1 tsp Skin Gourmet Baobab Fruit Pulp

DIRECTION

• Blend the garlic with 200ml vegetable until smooth and set aside

• Whisk the egg yolks for a minute then gradually add 100ml of the vegetable oil to the egg yolks whisking continuously, a few drops at a time

• Add the garlic mixture and whisk continuously

• Gradually add remaining vegetable oil in slow stream, whisking continuously until mixture is thick and pale in colour

• Add the vinegar, lemon juice, turmeric, salt and whisk in

• Add the baobab powder and use a spatula to stir in until it’s mixed and smooth

• Baobab garlic mayonnaise ready to serve. NB; store in the fridge, lasts for weeks
